We meet at Pula green market at 9 am or 10am to find ingredients for the original Istrian dish - Labinski krafi. Then we head to Scuola (our cooking studio). Krafi is ravioli-like pasta that originates from east Istrian town of Labin and is hard to find it even in local restaurants - that's how authentic it is! In Istria, we traditionally make it on holidays, such as Christmas. Famous for cheese-based filling, accompanied by an unusual combination of condiments including vanilla, nutmeg, lemon zest and raisins, this magnificent dish is somewhere halfway between a sweet and a savoury one. For this class we make them savoury, accompanied by žgvacet, typical Istrian stew. Another option is to make krafi with another local gem, padela-style meat, half sauteed, half fried in rich, thick sauce.

Our cooking classes are performed in our family farm - between Medulin and Ližnjan, in the southeast Istria. A small house hiding between olive trees is the origin of all my devotion to genuine food and wine. The main reason why I founded EatIstria in 2012. Here my grandmother Ana lived a true and hard peasant life.
